Bird's Nest Salad ©

Now that the days aregetting longer, there is a lot more activity going on outside. I've seen birds with little bits of grass and twigs in their beaks. What are they doing? Building a nest! You can too AND eat it for lunch.

Food Ingredients
Sprouts: you can make your own. Try alfalafa, mustard, radish, sunflower or lentils to name a few
Spinach: washed whole leaves
Strawberries
1-2 Carrots
2 or 3 hard boiled eggs
Salad Dressing: 1/2 cup yogurt
..2 tablespoons honey
..a few squirts of lemon
Peeling knife
A big flat dish


Stuff To Do:

Ask a grown-up to hard boil the eggs and take the shells off. Put aside to cool.

Put the sprouts in a circle in the middle of the plate. Make a little hollow in the the middle just like a real bird's nest would look! Rinse the spinach and put it around the outside of the sprouts.

Peel the outside skin off the carrots with a peeling knofe/potatoe peeler. Then make carrot curly cues: using the peelong knife, just draw the peeling knife down the length of the carrot. Put those on the spinach.

Cut up the strawberries and sprinkle those around the spinach/carrot part.

Mix up the dressing ingredients and sprinkle over the whole thing.

Now for the "birds": take the boiled eggs and put those in the "nest". Cheep-Cheep! I'm hungry!
