We are still idealists. We only accept the highest grade of bean. Period.
It is our heartfelt philosophy that coffee roasting is an artistic endeavor, that is the result of interaction between a person, their subject, tools and environment.
And such an environment! Vermont has given us a place to practice our art that is inspiring in its purity and beauty and nurturing in its people many of whom also came here to live a simpler more principled life. I'm fond of telling people that we came here to make a living, not a killing. The way we do things is normal around here. I think more of our stained glass artists, bike shop owners and craftsmen have law degrees and advanced degrees than anyplace in the world.
If you stick to your ideals and you maintain your philosophy, then the set of standards you apply emerge as an obvious choice based on your own needs.
